This dish is incredibly simple, healthy, and quick to make. If you are looking for a week night dinner with 10 ingredients or less, you will definitely want to add this to your rotation.
Angel Hair Spaghetti with Spinach, Tomatoes, and Pine Nuts
Ingredients:
1/2 box of Angel Hair pasta, cooked per package directions
1 large bunch or bag of Organic Spinach
2 large fresh tomatoes, chopped
1/4 cup Pine Nuts, gently toasted
1/4 cup pasta water, reserved
2 cloves of garlic, chopped
1 to 2 tablespoons EVOO
less than a 1/4 teaspoon Red Pepper flakes, optional
Salt and Pepper to taste
Fresh grated Parmesan, optional
Method:
Cook pasta to package directions ensuring that you salt the pasta water and reserve at least a 1/4 cup of the pasta water for later use. Drain the pasta and set aside. In a cast iron or large skillet, heat the EVOO over medium heat. Once shimmering add the spinach in batches if needed and cook until slightly wilted. Add in the garlic and chopped tomatoes and cook until the tomatoes have broken down about 5 minutes. Add the red pepper flakes if using and reduce heat to low. Toss in the Angel Hair spaghetti and a small amount of the pasta water (you can always add more if needed). Toss until the pasta is well coated with the sauce then turn off the heat. Finish by tossing in the Pine Nuts and grated Parmesan, if using. Salt and Pepper to taste. Serve immediately.
