In Texas, a Plain baked potato is anything but plain. Order a plain baked potato in the Lone Star State and that potato is gonna arrive at your table piled high with shredded cheddar, sour cream, bacon, and chives. This twice baked potato recipe is my version of a Texas Plain. I grilled the potato then the next evening I sliced it open, piled it high with flame kissed peppers and mushrooms and topped it off with shredded Vermont cheddar. Although the prep was minimal and the cook time quick, as far as baked potatoes are concerned, this meal was anything but plain and perfect for a quick weeknight dinner.
Char Grilled Twice Baked Potato
Ingredients:
1 to 2 prebaked Potatoes, cooked either on the grill or in the oven
1/2 cup of Vegetables, chopped such as peppers and mushrooms
1/4 shredded Vermont Cheddar
Salt to taste
Garnish: Sour Cream, Cracked Black Pepper
Method:
Preheat oven to 375 degrees. Slice the prebaked potatoes in half lengthwise. In a cast iron skillet or other oven safe pan, place the potatoes skin side down. Top the potatoes with chopped veggies and cheese. Sprinkle a bit of salt over each potato half. Bake in the oven until the potato is warmed through and the cheese has melted, about 30 minutes. Garnish with sour cream and black pepper. Serve immediately.
