Herman’s Meat Shop in Newark, DE is the only place we purchase steaks from anymore. They are a masterfully talented butcher shop with the most down-to-earth, kind and attentive staff you’ll ever meet. I always hope there will be a bit of a wait for my order, as I love to stand off to the side and watch them artfully breakdown beef, pork, and chicken. The care and love they put into their work shows in the quality of their product too. Every steak I’ve gotten from them is melt-in-your-mouth tender and the flavor is sublime. This of course is also due to the fact that Herman’s sources all its products from local farmers. I feel incredibly fortunate to have so many magnificent local farms and businesses surrounding me, and I do my best to honor these amazing ingredients and the hardworking people who provide them every time I step into my kitchen or fire up my grill.
Steak & Green Bean Frites
2 good quality boneless Ribeye Steaks
2 sprigs fresh Rosemary
2 tabs butter
1/4 tsp Celtic Gray Salt, or salt of choice
Black Pepper to taste
2 to 3 cups fresh Green Beans, washed and trimmed
1 tsp EVOO
1 tsp Trader Joe’s Everything Seasoning, optional
1/4 tsp Red Pepper Flakes, optional
Salt and Pepper to taste
For the Green Beans – preheat oven to 300 degrees. In a large roasting pan or casserole dish toss the green beans with the EVOO, Everything seasoning, red pepper flakes, and salt and pepper to taste. Roast in the oven 30 + minutes until very crisp or until desired doneness. Serve with steak or other favorite entree.
For the Ribeye – remove steaks from fridge and allow to reach room temperature, about 1 hour before cooking. Preheat a cast iron skillet over high flame. Coat the ribeyes evenly on both sides with the EVOO, Celtic Gray salt, and pepper. Once the cast iron is smoking hot, sear the ribeyes on each side about 3 to 5 minutes (vary the time by thickness of steak and/or doneness preference). At the last minute or so of cooking time, add the butter and rosemary and continuously baste the steaks until desired doneness is reached. Remove the steaks from the pan and allow to rest at least 10 minutes before serving. Garnish with the remaining browned butter and rosemary, if desired. Serve with Green Bean Frites or favorite side dish.
