As I’ve mentioned before, I like to put in several hours of prep work on the weekends I grill to help simplify upcoming weeknight dinners. Plus, if I’m gonna stand over hot coals for hours I want to cook more than one evening’s meal. This go around I smoked a pork butt over Apple and Pecan wood chunks and then utilized it in several recipes, including this one. This sandwich makes a super simple and fast weeknight dinner that’s ready in less than 10 minutes.
BBQ Pork Sandwiches
Ingredients:
2 to 4 slices leftover Smoked Pork Butt, or protein of choice
2 Whole Grain Burger Buns, toasted
1/4 cup Red Cabbage, shredded
2 to 4 tbsp Stubb’s Spicy BBQ Sauce, or sauce of chioce
Garnish: Fresh pickles & jalapenos
Method:
Over med high flame in a cast iron skillet, fry up the sliced pork butt (no oil needed) until crisp on both sides, about 5 to 8 minutes. Turn off the flame and add in the BBQ sauce and flip the pork slices until well coated on both sides. Serve immediately on toasted burger buns with shredded cabbage, pickles, and jalapenos.
