Leftover Crunchy Green Beans with Sunny Side Up Egg

What’s one of the easiest ways to use up leftover vegetables from last night’s dinner? Brunch of course! That’s exactly what I decided to do with the leftover Crunchy Green Beans I had on hand. They were delicious and paired scrumptiously with a Sunny Side Up Egg. Quick, easy, light but filling. My perfect kinda brunch.

Crunchy Green Beans with Sunny Side Up Egg 

Ingredients:

1 serving leftover Crunchy Green Beans

1 fresh Egg

1/2 tsp EVOO

Salt and Pepper to taste

Garnish: Sliced Cayenne Pepper

Method: 

In a nonstick skillet over med flame, heat the EVOO until shimmering. Crack the egg into the pan and cook the egg until the whites are just set, about 3 to 5 minutes. Finish with a pinch of salt and pepper.

Place a single serving of leftover Crunchy Green Beans on a plate and reheat in the microwave about 45 seconds to 1 minute. Place the Sunny Side Up Egg on top and garnish with the Cayenne pepper. Serve immediately.
