Latke with Fried Egg

img_0356-1So, what to do with leftover mash and fresh (from across the street) eggs? Why brunch, of course! Garnish with a little on-the-bias chopped chive, if you’re extra like me.

This recipe is for one, but it can easily be doubled, tripled, or whatever you need.

Ingredients:

1 serving leftover Mash

1/4 cup Breadcrumbs

2 tbs shredded Cheddar

2 tbs Avocado Oil

Salt & Pepper to taste

1 fried Egg, cooked to order

Method:

Preheat a cast iron skillet over medium flame.

Gently mix the mash, breadcrumbs, Cheddar, salt, and pepper in a bowl. Carefully form into a palm sized patty (it will be sticky).

Add the oil to the skillet. Once the oil is shimmering, add the potato pancake and sear until golden brown, 3 – 5 minutes. With fish spatula, carefully flip the pancake and sear the other side an additional 3 – 5 minutes. Serve hot with Sunny Side Egg Garnish with fresh chopped chive and flaked salt, if desired.
