Another Solo Breakfast Taco


1 La Tortilla Factory corn tortilla, lightly charred over an open flame

1 egg, lightly whisked

1 tab butter

1 baby red potato, diced

1/4 cup shredded lettuce or cabbage of choice

1 tbsp salsa or hot sauce

Salt and pepper to taste


Over a med flame, melt the tab of butter in a small cast iron skillet until just melted. Add the chopped potatoes, season with salt and pepper, and continue to pan fry until the potatoes are tender, about 5 minutes. Remove the potatoes to a cutting board and set aside. In the same skillet, pour in the whisked egg and scramble until desired doneness, about 2 – 3 minutes. Assemble the taco by layering the potato, egg, lettuce, and salsa on top of the corn tortilla. Serve immediately.
