Leftover Makeover Miso Ramen

Top your Top Ramen with leftover smoked pork and a soft boiled egg to make your next quick lunch feel all fancy without much fuss.

Ingredients

3-4 thin slices of leftover maple habanero smoked pork

1 seven minute boiled egg, shell removed and sliced in half lengthwise

1 pkg beef Top Ramen

1 heaping tsp white miso paste

1/4 cup chiffonade bok choy leaves, optional

2 cups water

salt and pepper to taste

1 jalapeno, sliced, optional

Method

To a med soup or saucepan bring the two cups of water up to a boil. Add in the Top Ramen flavor packet, bok choy leaves, and noodles and cook until noodles are just softened. Turn off the heat and stir in the miso paste. Taste and adjust seasonings as needed. Ladle into a soup bowl and top with the sliced leftover pork, soft boiled egg, and jalapeno slices, if using. Serve immediately.
