Polish Pizza


When I was working in Holyoke, MA several years ago, we would occasionally order staff lunch from Pizza D’action and my favorite was their Polish Kielbasa Combo. Since I am now living nearly seven hours from Holyoke and grabbing a slice or two for lunch is no longer an option, this pizza recipe is my recreation of the delicious flavors inspired by that gorgeous Holyoke slice.

Ingredients

1 pizza dough

1/2 to 1 cup cooked saurkraute

1 link turkey kielbasa, thinly sliced and precooked

1/4 to 1/2 cup red or white pizza sauce

1 to 1 1/2 cups shredded Italian blend or mozzarella cheese

1/2 green bell pepper, thinly sliced

1/4 sweet onion, thinly sliced

1-2 stalks green scallion, washed, trimmed, and thinly sliced

Method

Preheat oven to 425 degrees.

Roll out pizza dough so it is roughly the same size as your pizza pan, using a little dusting of AP flour to keep the dough from sticking. Place it on top of the pizza pan and layer on the pizza sauce, cheese, and remaining toppings.

Bake in the oven until the dough is crisp and the cheese is golden and bubbling, 18 to 25 minutes.

Allow the pizza to rest at least 5 minutes before slicing. Garnish with the green scallion and serve.
