Kung Pao Gnocchi

This simple sweet and spicy solo dinner recipe is ready in 15 minutes for a no-fuss veggie forward meal.

Increase the ingredients for two or more servings and, as always, add as little or as much heat as you like.

Ingredients

1 cup frozen gnocchi

1 cup fresh green beans, trimmed

2 celery stalks, trimmed and thinly sliced

1/2 green bell pepper, rough chopped

1/4 cup toasted peanuts

3 dried arbol chilies, broken in half

1/4 tsp 5 spice powder

2 tbsps soy sauce

2 tbsp hoisin

2 tbsp agave syrup

1/4 cup water

2 tbsp sesame oil

pinch of salt

generous amount of black pepper

Garnish: sliced green scallions

Method

In a nonstick skillet over med high flame heat the sesame oil until shimmering. Sear the frozen gnocchi on both sides until just cooked through and slightly crisp, about 3 minutes per side. Set aside.

To the same pan add the green beans, celery, bell pepper, 5 spice powder, salt, pepper, and dried chilies. Sauté until the veggies are just tender, about 5 minutes. Add in the soy, hoisin, 1/4 cup water, and agave. Stir in the gnocchi and toss until well combined. Continue sautéing a few minutes more until the sauce has thickened per your preference. Taste and adjust seasonings, if necessary. Transfer to a plate, garnish with the toasted peanuts and green scallions. Serve immediately.
