New Year’s Cast Iron Fried Catfish with Golden Black-Eyed Peas, Dijon Green Beans & Crispy Okra

The only traditions from my childhood I carry on today are the ones that either involve a cast iron skillet or an open flame. For New Year’s Day, my mother would cook black-eyed peas for good luck and boiled cabbage for monetary gain throughout the upcoming year, as countless other Southerns did and still do….
