Peri Peri Wings

The first Peri Peri chicken I had was at Nando’s in Baltimore, and now their delicious sauces are available at most grocery stores. My favs are their Medium and XX Hot sauces. The Medium sauce is citrusy with a nice vinegar tang, and just the right amount of heat. The XX Hot is, well, an inferno of yumminess. I tossed these wings with a 2:1 Medium/XX Hot mix. Grab whichever flavor you like though, as each sauce is absolutely delicious on chicken, fish, pork, or tofu.

Ingredients

2 – 4 servings chicken wings, left whole or broken down Buffalo style

2 tbsp peanut oil

generous amount of salt and pepper

Nando’s Peri Peri sauce of choice

Method

Preheat oven to 475 degrees.

In a large mixing bowl toss the wings with the peanut oil, salt, and pepper. Place on an oiled sheet pan and oven fry, about 30 – 45 min, until they are cooked through and the skin is golden and crispy.

Note: If you have a hood vent, turn it on. The oven could get smoky.

Transfer the cooked wings to a clean mixing bowl and toss with Nando’s Peri Peri sauce until evenly coated. Serve immediately with side of choice. I had Alexia Sweet Potato Fries on hand so that’s what I went with.
